For a first read, choose Fifty Shades of Grey, then Fifty Shades Darker, then Fifty Shades Freed. The shorter titles Grey, Darker, and Freed retell the relationship from Christian's perspective. They are not three more consecutive adventures after the original ending.
That distinction matters before you buy an ebook or audiobook. A search for “Grey book” can lead you to a different narrator's account of the story you meant to start.
Which story are you starting?
Anastasia Steele meets businessman Christian Grey when she interviews him. The relationship that follows is shaped by attraction, differences in experience and power, and Christian's desire for control. The author's introduction to the original novel establishes that premise and identifies it as a book for mature audiences.
Choose it because you are interested in an adult relationship narrative with explicit sexual content and a strong focus on its central couple. If you mainly want to understand the cultural phenomenon, trying the official sample is more informative than choosing solely from the title's reputation. If you want a thriller with a romance subplot, check the sample carefully: the relationship itself is the reason to follow this sequence.

Our recommendation is to finish the original trilogy before deciding whether to read the retellings. You preserve the experience of meeting Christian through Ana's limited knowledge, then return for a different perspective if that interests you. There is no need to alternate chapters from two books on a first read.
If you are rereading, a paired comparison can be interesting. Choose a scene you already know, read each account, and ask what each person notices, assumes, or leaves unsaid. Keep the scene's location in both editions; page numbers will not line up. This is a reading exercise, not a requirement for understanding the original books.
Coming from the films?
Start with the first novel instead of treating the films as a chapter-by-chapter substitute. Prose gives you a character's account of an encounter in a different way from a filmed performance. The useful question is not simply “What was left out?” but “How does being inside this perspective change what I think happened?”
For a book group, agree whether the discussion includes only the original trilogy or the retellings as well. A detail that feels obvious to someone reading Christian's account may be something a first-time reader of Ana's account has not been told.
